Roasted Asparagus

Many years ago, in the early part of dating, I was visiting Michael's apartment for dinner. "Guess what I've got in the oven?" he asked, all smiles, as I came through the door. "Roasted asparagus!" he announced, beaming, without waiting for an answer.

I thoughtlessly answered, "Oh. I don't think I like asparagus." His face fell and I regretted not keeping my mouth shut since he had been clearly pleased and excited. I hastily added, "But I could be wrong. I haven't eaten it very often."

Boy was I ever wrong. This was the first recipe he ever taught me and it remains one of my favorites. Prep is speedy and so easy you can tell the kids to do this dish.

Roasted Asparagus

1 bunch asparagus
1 tablespoon olive oil
1/8 teaspoon black pepper
Mix of herbs (thyme, basil, oregano) (easy on the thyme)
Cooking spray

Preheat oven to 450 degrees F.
Snap off and discard tough ends of asparagus.
Pour a little olive oil into baking pan (with high sides).
Put asparagus in pan and toss to coat with oil.
Add herbs, salt, and pepper and toss again to coat.
Bake until done. (not a lot of time...maybe 5-10 minutes.)

The asparagus should be a bright, pleasing green and it should be easily pierced with a fork. Don't roast it too long though...it'll end up looking all shriveled and sad.

I loooove asparagus, an absolutely perfect vegetable. What a beautiful photograph

Thanks! You even have an icon to prove your asparagus love!

Yum, asparagus.

Sadly enough, I had never even heard of asparagus until I was 16, and it was served at a wedding I was attending. I fell in love that night.

Now that I am grown up and moved away, my parents eat asparagus frequently. Jerks. ;)

haha....but were you a picky eater? Maybe you wouldn't have appreciated asparagus as a kid.

you are making me crave asparagus!

That's the goal...more yummy veggies are always welcome :)

Mmmmmmm asparagus, one of my all time favorite veggies. Have you ever roasted it and then put it on pizza with sun dried tomatoes and goat cheese? It's heavenly. As always, I have to complement your photography, it really does justice to the food.

Thank you! I've never put asparagus on a pizza I made but I did once eat a roasted asparagus pizza that was wonderful. Thanks for reminding me about that. Now I have to try out your suggested flavor combination!

Sounds delicious. Thanks for sharing!

no problem...thanks for reading!

Looks great! I copied and pasted it!Thank you!

Hooray...I hope you like it when you try it out.

Thanks for the post! I'm always looking for easy recipes for vegetables or I would never eat them.

*laugh* Well I hope to hear that you tried cooking this and loved it soon then. Check out the two threads for some other quick asparagus ideas too...the roasted leek and asparagus sounds really good.

Wow... that looks amazing. I'm definitely making it next time chipleduff comes to town.

Oh... and the mushrooms also look awesome. Any secrets to those? :)

Our asparagus season

will be starting in 3-4 weeks and we will eat it non-stop as it grows wild all over our property. Roasted is the best method to cook them and retain the sweet flavor, hands down. If you are an egg lover another staple during this season for us is an omelet made with leftover wild rice, leftover roasted spears and grated extra sharp cheese, served with soy sauce...pure bliss!

YUM. Asparagus is my favorite veggie. I usually pan sear with olive oil, a splash of white wine and lemon juice with like a bagillion crushed cloves of garlic. Cover and steam after you get a little carmelization. Heaven. Thanks for sharing this recipe, I will definitely try it!

Oooh...I'll want to give this a try too. Thanks!

I added this to memories. We love asparagus and they´re in season now here.
Spain is a HUGE asparagus producer!

Nice to see you here again.

Yay for asparagus season! Maybe that means it'll start showing up on sale here too.
