Pan-Fried Lamb Leg Steak with Rosemary

I pick up a monthly package of frozen meat from my Meat CSA (Community-Supported Agriculture) membership. We asked for no beef so we usually get a mix of pork, chicken, and lamb (our favorite). But many times I'll get cuts of meat that I'm not sure how to cook. For example, I found this recipe by searching for "Leg of lamb that looks like a steak." Tasty and easy to make.

Pan-Fried Lamb Leg Steak with Rosemary
Serves 2

Ingredients:

1/2 pound boneless lamb leg steak, trimmed
1 or 2 springs fresh rosemary, leaves only
2 garlic cloves
2 tablespoons olive oil
sea salt and freshly ground black pepper


  1. Crush garlic cloves with rosemary leaves in a pestle and mortar and add sea salt, black pepper and a little olive oil. Rub your spices over the meat and marinate the lamb leg steaks for 10 minutes or longer if possible.

  2. Heat a skillet with a little oil to medium high heat.

  3. Cook the marinated lamb leg steaks, 4-5 minutes on each side until they’re golden. 3 minutes on each side left the centers raw. Cooking 5-6 minutes on each side was a little too done and the meat toughens up a bit too much for my taste. I think 4-5 minutes on each side is the sweet spot.

We can get that cut here and this looks just like something we'd love. I grow my own rosemary so yeah...YUM!
I'd leave the herb/garlic on over night, I think.

I had intended to leave the rub on overnight but then I forgot to do that before going to sleep. And then I meant to do it a few hours before dinner and I got busy with other things. So I ended up spicing it for just 30 minutes before cooking it. Still tasted good :)

I bet yours will taste great with your own fresh picked rosemary!

Me too! I'm always surprised when people say they don't like lamb but they'll eat beef. To me, lamb is like beef but with even more flavor!

Some people don't like that much flavor in their meat. My wife likes beef but she won't go near lamb.

Sounds Yumm! My DIL uses a similar rub for her steaks (beef) the dish looks very attractive with the asparagus. Great color contrast!
